- 2 celery stalks
- 2 leeks
- 2 carrots
- 1 red onion
- 2 garlic cloves
- ½ bunch parsley
- 2 chicken breasts
- Noodles
Method

Coarsely chop 2 stalks celery, 2 leeks, 2 carrots, 1 red onion, 2 cloves garlic and ½ bunch parsley. Place in a saucepan and cover with water.
Bring to a simmer and season. Poach 2 chicken breasts in the liquid, then shred and return to the soup.
Serve hot with cooked noodles.
