Ingredients

Method
  • 4 x 125 ml tubs vanilla goat’s-milk yoghurt
  • thyme leaves or fresh berries, for serving
  • For the smoothies:

  • fresh fruit, such as raspberries or strawberries
  • 4 x 125 ml tubs strawberry goat’s-milk yoghurt

Method

Ingredients

Scoop the yoghurts onto 4 x 10cm x 10cm pieces of wet cheesecloth.
Bring together the ends of each piece and tie tightly with string to make a small ball.
Hang the balls in the refrigerator overnight, placing a container underneath them to catch the liquid that drips.
The following day, remove the balls, open and serve the cheese with a few thyme leaves for breakfast or as a dessert with fresh berries.

To make the smoothies: Blend the fresh fruit and yoghurts. Divide among four glasses and serve cold as a breakfast drink or anytime treat. For an extra-refreshing drink, add a few blocks of ice.
