5 ways with cauliflower rice

Hannah Lewry shares a few of her favourite ways to cook her favourite vegetable, cauliflower.

It’s no secret that I’m a vegetable freak; cauliflower in particular is one of my all-time favourites. Cauliflower rice from Woolworths, however, is my new obsession and is so easy to prepare!

Why should I try cauliflower?

Over the last year or so it’s really become the a super trendy and versatile vegetable, especially when it comes to replacing carbs. Woolworths has done all the hard work with their cauliflower rice. It’s delicious with curries, as a replacement to couscous or traditional rice, and soaks up flavours and has a nutty bite.

How to cook cauliflower rice?

The key is not to overcook it: a quick blanching is all you need to soften the vegetable slightly.

I find it’s best done buy pouring a packet of Woolworths cauliflower rice into a large sieve and dipping it into boiling salted water for 30 seconds to a minute, and then draining it throughly, patting dry if necessary.

How to eat cauliflower rice?

DIY Cauli-rice/cauli-couscous
If you want to give making cauli-rice – or in this case, cauli-couscous – a go from scratch, then this is the ultimate recipe for cauliflower couscous. It is very easy, and super tasty.

Feta and lemon brinjals with califlower rice
Microwave Woolworths cauliflower rice in the bag for 2 minutes. Pan fry 1 sliced brinjal in 2 T olive oil with 2 cloves crushed garlic until charred on both sides. Toss with the cauliflower rice, 150 g crumbled feta, juice of 1/2 lemon, 1 x 400 g can drained lentils and 1 t chopped Italian parsley. Serve with roast chicken.

Panfried Spanish cauliflower rice
I love making this for dinner to serve with fish or calamari. Pan fry 100 g sliced chorizo or chopped streaky bacon in 3 T olive oil for 1 minute. Add 1 clove thinly sliced garlic, 1 x 400 g can drained lentils, 100 g halved cherry tomatoes, ½ t paprika and ½ t chilli flakes and fry for a further 2 minutes. Add 1 x 400 g packet cauliflower rice and cook for 2 minutes or until until tender, but still with a bit of bite. Serve hot with chopped parsley and season to taste.

Follow this cauliflower rice recipe and serve with roast lamb or lamb chops, hummus and tzatiki on the side.

Cauliflower croquettes
You have to try these sensational croquettes! Simply adjust the recipe by tossing 500 g cauliflower rice in olive oil and then arranging in an even layer on a baking tray. Roast for 5 minutes until tender, then prepare as instructed.
