Hi Rezet,
Kate’s umami paste is called No.5 (as in the 5th taste), and she got it on a trip to London. It’s a paste made from anchovies, porcini mushrooms, Parmesan… all ingredients that add that deeply savoury “umami” flavour to dishes, so just a little adds a big savoury hit. Unfortunately Woolies doesn’t stock it, but you may be able to get it (or something similar) from a specialist deli in your area.

Yes, exactly. I have a collection of over 120 cookbooks and have probably only ever made 2 or 3 dishes out of any one book. TASTE deserves better.

So if he was converted, I may give it a go.

More often than not one buy magazines to try out recipes and never get around to actually doing it. I am going to love reading about your adventures, especially when using substitutes. Good luck for the rest of the year!
