I don’t often buy pork (other than pork belly) as I’m never really sure how to cook it, but this was so quick and easy that I’ll definitely do it again! I didn’t have the 7-grain medley, but will try that next time. I used barley and I added a bit of lemon zest to the mushroom & spinach. This is definitely going on repeat!
