I found the recipe in his cook book “Plenty” but found a version on the web here (https://foodforhealth.kaiserpermanente.org/recipes/tamaras-ratatouille-from-plenty/) if you do not have the cook book. We serve it for lunch and supper either topped with greek yoghurt or feta and fresh coriander.
