This was my favourite at Garlicks [the Vineyard Restaurant]. I thought it was more like a welsh Rarebit. Havent tasted anything like this again!| Happy memories. Also very special as I was pregnant with my first baby! And guess what grilled cheese/toasted cheese is my daughter’s favourite!

Still make them when we remember too. We just mix the grated mature cheddar cheese with a bit of milk, mustard, salt & pepper to form a thick paste and then spread it on the bread thickly. When you grill it, it bubbles up and is ready when it starts to brown on top. Delish!

This is my idea of the recipe:
Grill 4 slices of bread on 1 side only.
Beat an egg and add enough grated cheese to make a thickish paste, Add salt and pepper to taste.
Spread the un-grilled side of the bread, thickly with the cheese mixture and frill until golden brown and puffed.
Enjoy!!

Put it on top a slice of bread (eg rye bread) and grill.
