Combine the parsley, basil, cilantro, olive oil, garlic, vinegar, lime juice, coriander, cumin, salt, and pepper in a blender. Process, shaking the blender if needed, until smooth, 2 to 3 minutes.
Add some roasted pine nuts and parmesan cheese to turn the chimichurri into a pesto.

Coriander works really well with limes and avo so the minced one would do well in a salad dressing or as a dressing on tacos….yum!
